Mexico - Pocitos Geisha - Natural
This Geisha from Finca Pocitos is crafted with care at every stage. Cherries are hand-picked at peak ripeness before being floated to remove defects and impurities. A 36-hour anaerobic fermentation enhances the coffee’s complexity, bringing out layered fruit and floral characteristics. Drying begins in full sun to halt fermentation before transitioning to 30 days of slow, shaded drying - a process that refines its clarity, structure, and depth of flavour.
Behind this exceptional coffee is Carlos Cadena Valdivia, a third-generation producer redefining Mexican specialty coffee. In 2024, his dedication to quality earned first place in Mexico’s Cup of Excellence (COE) experimental category with this very coffee. His transformation of the family farms - introducing new cultivars, advanced processing methods, and a state-of-the-art wet mill - continues to push standards forward.
